The Ingredients and Substitutions Coconut Milk: I use full-fat canned coconut milk as it's thick and creamy - don't use a Tetra Pak version (carton). Tinned coconut cream may work, too, though I haven't tried it.

About this Salted Caramel Ice Cream My husband has a dairy-sensitivity that seems to affect him the worst with cheese-loaded pizzas and most of all with commercial ice cream.


Be sure to drain before adding to blender. Add soaked, drained cashews, coconut milk, coconut oil, maple syrup, vanilla and sea salt to a high speed blender and blend until creamy and smooth, scraping down sides as needed. Use the "liquify" setting if you have it. You want it to be completely creamy and blended.


Using a round cake pan or loaf pan (any mid-sized dish - I used a 6″ cake pan), pour the ice cream in three layers. For the first layer, pour enough to cover the bottom of the pan. Drop in a couple spoonfuls of the caramel and cover with a sprinkle of the chopped chocolate. Use a toothpick to swirl together.


Once the butter and sugar are combined, very slowly pour in the soy creamer, stirring as you pour. Once combined, let the mixture boil for 1 minute without stirring. It will bubble up in the pan, but don't let it bubble over. Remove from the heat and stir in the salt. Let it cool down until it thickens up.


Pour the caramel ice cream into a loaf pan or plastic container and cover with a lid or some plastic wrap and freeze for 4 hours. Storage instructions This vegan caramel ice cream will keep for a couple of months in an airtight container in the freezer. Tips for making non-dairy ice cream

Ingredient Notes Coconut Milk - It's important to note that this recipe calls for coconut milk in a carton (the kind you would find next to other non-dairy milk) rather than canned coconut milk. Pour a few tablespoons of coconut milk into a small bowl, add the arrowroot, and whisk together until there are no lumps. Set aside. Pour the remainder of the 2 cans of coconut milk and the maple syrup into a small pot and begin to heat on the stove on medium low heat. Bring to a low simmer and allow to simmer for 2 minutes.


Pour the ice cream mixture in a medium size bowl, then add the caramel sauce a little bit at a time while creating a swirl pattern using a toothpick or chopstick. Cover the bowl with a plastic wrap, making sure the plastic touches the surface of the ice cream. Set it in the freezer for 6 to 8 hours and our vegan salted caramel ice cream is ready.

Vegan Salted Caramel Ice Cream. Rinse and drain the soaked cashews and throw them into the blender with the rest of ingredients and blend until smooth.
